Why not a stainless steel frying pan for steak?

Stainless steel frying pans are generally more expensive than aluminium and you will have to build up a brown “seasoning” colour on the pan before it acquires non-stick qualities.

Plus, stainless steel doesn’t conduct heat as efficiently as aluminium. You could find hot spots in the pan making cooking slower and requiring your full attention.


The Easy Way to Perfectly Fry Steak

To cook a perfect fried steak you’ll need a good frying pan, high heat and your full attention. So, prepare your vegetables or salad before you cook the steak.

1  First, flatten and tenderise 
    Just make fist and gently, but firmly bash the steak (as if you were banging on a table).

2 Get your pan hot before you start cooking 
   Add a small amount of oil. It should roll easily across the pan. Now cook your steak.

Put the steak into the frying pan and use a spatula to make sure its flat on the frying pan base. You are searing the meat to quickly brown it and seal in the juices.

Don’t be tempted to use a lid on the frying pan. This may stop splatter, but will steam the meat and reduce the pleasing crusty browning of a good steak.

If you have a hot pan and minimal oil you’ll have minimal splatter.

A steak that starts out 1.5cm thick allow 1 minute per side for rare, 2 minutes per side for medium and 3 minutes per side for well done. But times will vary depending on the cooker/hob you are using. You need to practice to find the right timing for you.

3 If you need to use your frying pan for making a sauce or gravy:
   Remove it from the heat.

Stop the steak from over cooking by removing it to a warm plate and cover it with foil, until you are ready.

Reserve any juices that come out of the meat for your sauce/gravy or just pour round the steak.

Tip: Only add salt to taste when you eat. Adding salt before you cook will draw out the juices and make your steak rubbery.
